Formula and elaboration process:

Suggested formula:

Ingredients Quantity
Catesmix Berliner  10 Kg
Water 5,4 / 5,8 Litres.
Fresh yeast 0,6 Kg.

Elaboration process:

Knead all the ingredients until you get a thin and elastic dough.

Stretch the block up to 1cm. thick and die-cut.

Ferment with little humidity and fry at 180ºC.

Glazer with the hot piece.
