Formula and elaboration process:

Ingredients Quantity
Catesmix High fibers  10 Kg
Water 7 – 7,5 Litres
Fresh yeast 200 g.

Elaboration process:

Knead until you get a thin and elastic dough. Divide and roll the pieces Pre-fermentation 20 minutes.

Ferment at 28ºC HR 80%. Bake with steam at 210-220ºC.
