Preparation for elaborating oat bread.

Oat is very rich in proteins and fibers, it provides almost all the amino acids necessary for our body, it is rich in phosphorus and calcium salts and alsto the great contribution of group B vitamins.

Rich in slow-absorbing carbohydrates that make it possible to satisfy hunger, making it an ideal complement to most diets.

Formula and elaboration process:

Suggested formula:

Ingredients Quantity
Catesmix Oat 50 5 Kg.
Flour W200 5 kg.
Water 5 Litres
Fresh yeast 300 g.

Elaboration process:

Knead until obtaining a fine and homogeneous mass. Mass temperature 24º C. Divide and bole. Let rest 15 ‘. Form, decorate with oat flakes and ferment at 30ºC and 75% humidity. Steam cooking 210º C.
