25% intermediate preparation for the elaboration of multicereal bread with excellent flavor. Formula enriched with flax, millet and sesame seeds.

Ideal for making multigrain baguettes.

Formula and elaboration process:

Ingredients Quantity
Catesmix Birdi 25 7,5 Kg
Flour bread 2,5 Kg.
Water 6,5 Litres.
Fresh yeast 200 g.
Salt 180 g.
Improvers 50 g.

Elaboration process:

Knead until obtaining a fine and elastic mass (Temperature mass above 24ºC). Divide and let stand for 15 minutes. Form the pieces.

Ferment in chamber 30ºC 80% RH -. Steam cooking, oven temperature 210 -220ºC.
