Catesmix Birdi 25 | 7,5 Kg |
Flour bread | 2,5 Kg. |
Water | 6,5 Litres. |
Fresh yeast | 200 g. |
Salt | 180 g. |
Improvers | 50 g. |
Elaboration process:
Knead until obtaining a fine and elastic mass (Temperature mass above 24ºC). Divide and let stand for 15 minutes. Form the pieces.
Ferment in chamber 30ºC 80% RH -. Steam cooking, oven temperature 210 -220ºC.
