Intermediate preparation 50% for the production of multigrain bread.

Formula enriched with wheat fiber, malt, oat flakes, flax seeds, sunflower seeds, millet and sesame.

Formula and elaboration process:

Suggested formula:

Ingredients Quantity
Catesmix Four Grains  5 Kg
Flour bread 5 Kg.
Water 5,8 Litres.
Fresh yeast 300 g.

Suggestion of the elaboration process:

Knead until obtaining a fine and elastic mass (Temperature mass above 24ºC). Divide and let stand for 15 minutes.

Form the pieces and decorate with seeds. Ferment in cold room 30ºC 80% RH -. Cooking with steam, oven temperature 220 -230ºC.
