50% intermediate preparation for the preparation of rye breads with high crumb coloration.
Very tasty loaves of soft bark and very good conservation are obtained.

Catesmix Dark Rye  5 Kg
Bread flour medium strength 5 Kg.
Water 7 – 8 Litres
Fresh yeast 300 g.

Suggested mold type bread formula: 5 Kg.
Water 10 Litres
Fresh yeast 300 g.

Suggestion elaboration process:

Knead until you get a thin and elastic dough. Mass temperature 26-28ºC. Rest in block for 10 minutes. Divide and bow.

Fermentation at 30ºC and 55% humidity for 30 minutes. Bake at 230ºC with abundant steam.
