Suggestion elaboration process:
Knead until you get a thin and elastic dough. Mass temperature 26-28ºC. Rest in block for 10 minutes. Divide and bow.
Fermentation at 30ºC and 55% humidity for 30 minutes. Bake at 230ºC with abundant steam.
