Complete preparation for the preparation of malted breads of very dark coloration and with a great supply of fibers, supplemented with flax seeds, oats, soybeans and sunflower.

Formula and elaboration process:

Ingredients Quantity
Catesmix German Toast 10 Kg
Water 5,5 Litres.
Fresh yeast 300 g.

Suggestion of the elaboration process:

Knead until half elasticity. Mass temperature 26-28ºC. Rest in block of 5 minutes.

Divide and bole by keeping at rest 10-15 minutes. Form the pieces and you want to put the molds. Fermentation at 35ºC with high humidity. When the dough has covered 3/4 of the volume of the molds bake at 215-220ºC.
