Formula and elaboration process:

Ingredients Quantity
Catesmix Urbrot  5 Kg
Flour bread 5 Kg.
Water 5,8 Litres.
Fresh yeast 200 g.

Suggestion of the elaboration process:

Knead until obtaining a fine and homogeneous mass (Temperature mass above 26ºC). Rest in block 10 minutes. Divide the pieces. Pre-fermentation 25-30 ‘.

Form the pieces, decorate with oat flakes and place in the molds. Ferment in cold room 28ºC 75% RH -. Steam cooking, oven temperature 200 -210ºC.
