Special “CLEAN LABEL” preparation for the elaboration of the typical roscon of kings of high quality and exceptional flavor and lactose free.

Sourdough roscon specially developed to obtain a product that stays fresher and tender for longer, with excellent flavor and flavored with orange blossom water.

* The amount of egg and water can be modified as long as the total amount of liquids of 4.89 kg for 10 kg of Catesmix Roscón CL is maintained.

Suggestion of the elaboration process:

Knead until you get a thin and elastic dough. Mass temperature 26-28ºC.
Divide the pieces and let them stand by 5 minutes.
Form, ferment at 28ºC with 80% humidity. Paint and decorate. Bake (steam-free cooking at 165 degrees for 15 minutes approx.)
